This is one of my favourite breakfast smoothies! It’s sunshine in a glass and perfect for hot summer mornings or even in winter when you just want to be reminded of the hot sun on your face. Mango is definitely top of my list of yummy fruits to enjoy and this recipe, with the warming spices, makes my mouth tingle. Try this for a quick and easy breakfast or snack option:
Serving Size: For 2 people
Preparation time: 10 mins
Ingredients
- 100g Frozen Mango
- 50g Frozen Banana
- 25g Frozen Pineapple
- 2 Tbsp canned coconut milk (use cream from the top)
- Half a tsp of ground turmeric
- Zest of 1 lime
- Pinch of ground ginger
- 3 cardamon pods (discard outer shell and use seeds inside)
- Pinch of cinnamon
- 150ml coconut milk (you can adjust this slightly if you want a different consistency)
Method
- Starting with all of the frozen fruit pop all of the above ingredients in a powerful blender and whizz until smooth. I have a smoothie setting on mine which takes just over a minute but blend for longer if you haven’t reached the consistency you like. If it is too thick and won’t blend properly just add more coconut milk. Decorate with mint leaves or basil leaves to make it look really appetising.
